The Changing Cafeteria

This fall, Congress is set to renew the Child Nutrition Act which funds breakfast and lunches for 30 million school children. Momentum is building to provide enough money to purchase local and whole foods, but that is a challenge for some. Today we'll hear how cafeterias are changing with the times.

Julie Paradis is administrator for the Food and Nutrition Service at the United States Department of Agriculture.

Eric Boutin is director of Child Nutrition Services at Auburn School District. The district has 15,000 students and serves 11,000 meals per day. He has been with the district five years.

Walter Bronowitz is Executive Chef and Dietary Manager at Seattle Children's Hospital and Regional Medical Center. The cafeteria serves a million visitors per year. Walter has been a chef and a culinary educator for 20 years.

Alyson Simeone is the Sustainability Coordinator for Food and Dining Services at Western Washington University, where she's a sophomore. She works with dining services to bring more local and sustainable food into the dining hall.
